Turkey Meat Loaf


This versatile turkey meat loaf is another one of my recipes that can be eaten as part of any meal.  I eat it for breakfast with egg and spinach, for lunch as part of a salad, for an evening meal with veggies, or on its own as a snack!

The quantities below make enough mixture for two small loaves.  But as I only have one loaf tin, I made one loaf with half of the mixture, and used a muffin tin to make 8 mini meat loaf muffins with the other half.  I’ve kept this in the fridge for 4-5 days so it’s an ideal recipe to prep ahead for the week.





Makes two small loaves, or one small loaf and 8 mini muffin loaves;

Loaf mixture;

  • 1kg lean turkey breast mince
  • 1 leek (sliced)
  • 1 small/medium red onion (chopped finely)
  • 1 large garlic clove (crushed)
  • 2 medium sweet potatoes, baked and skin removed (this equals approx. 200g of mashed baked sweet potato)
  • 2 eggs (beaten)
  • 75g Milled Organic Flaxseed
  • 50g Almond Flour
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 2-3 tbsp of chopped fresh chives (optional)
  • 2-3 tbsp torn fresh basil (opttional)

Topping sauce;

  • 250g passata (approx.)
  • 1 tbsp tomato paste
  • 1 tsp chilli powder
  • 1 tsp paprika

Preheat the oven to 180C

Cook the sweet potatoes (I microwave them for about 6-8 minutes and then place them in the oven to finish baking whilst I prepare the other ingredients).  The skin needs to be removed and the sweet potato mashed.

Gently fry the onion and leek in a frying pan with a little coconut oil until soft.  Add the crushed garlic and cook for a further minute.  Place to one side in a bowl to cool slightly.

Meanwhile, make the topping sauce by adding the listed ingredients to the frying pan, and simmering until the sauce thickens.

Add the rest of the loaf ingredients to the bowl with the onion, leek and garlic.  Combine the ingredients with your hands.

Spoon the mixture into a lightly greased/lined loaf tin.  If using a muffin tin to make mini loaves, lightly grease each muffin hole with olive oil using your fingers and spoon the mixture in.

Spread the topping sauce onto the loaf, and cover losely with foil.  If making mini muffin loaves, you do not need to cover them with foil.

Bake in the oven at 180C

Bake the loaf for 55-60 minutes, ensuring that the turkey is sufficiently cooked.

Bake mini muffin loaves for 30 minutes.
