No Pasta Lasagna



I’m starting to think that I may have a slight aubergine obsession, it’s featuring in so many of my recipes these days!  But as I’ve said before, baked aubergine does a great job of acting as an alternative to doughy type foods, such as bread and pasta.

So on that note, here’s a clean version of the classic lasagna; my No Pasta Lasagna, which contains aubergine slices in place of the traditional pasta sheets.  There’s no white sauce in this recipe, personally I don’t feel that it needs it.  However, you could add layers of creme fraiche or soured cream if you fancied a white sauce layer in your lasagna.

  • 250g of beef steak mince
  • 2 aubergines
  • 1/2 a red onion
  • 2 cloves of garlic
  • 6 mushrooms
  • 1 tbsp oregano
  • 2 tins of chopped tomatoes
  • 125g mozzarella cheese
  • 1-2 tbsp Parmesan cheese
  • Handful of fresh basil leaves
  • 1 tbsp coconut oil
  • Salt and pepper
