Here is yet another simple and delicious make-ahead breakfast recipe for you all to try. I’ve been working this last week and so wanted a breakfast that would be ready to go with minimal faffing around. Quite frankly, I’ll do anything to have 15 minutes extra in bed every morning! So I made this Salmon and Feta Breakfast “Quiche” to last the whole week.
I’m calling it a quiche but there’s no pastry involved. It’s gluten free, grain free, and completely clean. I found that this clean breakfast quiche tastes amazing when eaten cold. It’s great when combined with spinach leaves and avocado, veggies, or even a helping of sweet potato or squash for the busier days when the extra carbs are needed.
- 2 salmon fillets
- 7-8 medium sized vine tomatoes
- 8 eggs
- 250ml single cream
- 25g bunch of fresh chives
- 125g feta cheese
- Salt and pepper
