Garlic Roasted Broccoli and Carrots with Parmesan

There are so many delicious ways to cook vegetables that I could never get sick of eating them!  This roasted broccoli and carrot recipe makes one of the tastiest and easiest side dishes ever.  There’s just something about veg with cheese that ticks all the boxes, so give this a whirl, you won’t be disappointed!


  • 1 head of broccoli
  • 5-6 carrots
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 garlic cloves
  • Parmesan cheese
  • Salt and Pepper

Preheat the oven to 210C.

Cut the broccoli florets from the stem.  Slice the carrots into sticks, approximately 1cm wide.

Place the broccoli florets and carrot sticks on seperate lined baking trays.

Drizzle the olive oil over the vegetables, and season with salt and pepper.  Crush the garlic cloves and sprinkle over the veg.  Use your fingers to move the vegetables around the tray to spread the oil and garlic.

Roast the carrots in the oven for approx. 40 minutes, and the broccoli for approx. 20 minutes.  They should still have a crunch to them.

Combine all of the veg on one tray.  Drizzle the veg with fresh lemon juice and sprinkle with the desired amount of parmesan cheese.

Serve and enjoy!
