Eating raw veggies is a great way to gain extra vitamins and minerals that would otherwise be lost in the cooking process.  For example, vitamin C, thiamin and riboflavin are water soluble and so are easily lost through leaching out into cooking water.  For this reason, I like to snack on raw veggies as often as I can.

Try wrapping raw mange tout in smoked salmon or proscuitto for a quick nutritious snack.
