Paleo Scotch Eggs


This recipe for a clean version of the traditional scotch egg is Paleo friendly and gluten free.  These paleo scotch eggs can be kept in the fridge for the working week.  Personally, I like to have them as a convenient make-ahead breakfast option.  However, they’re equally good as a snack or at lunch time.

The flaxseed coating on these paleo scotch eggs is optional.  They can be made without it and are still very tasty, but I definately recommend adding the coating to get the full paleo scotch eggs experience.

Nutritionally, they pack a healthy punch with plenty of protein and omega 3 fatty acids, making them great for a pre or post workout snack.  If you opt for the flaxseed coating, you also boost your intake of fibre.

Makes 6:

  • 6 eggs
  • 800-850g pork mince
  • 1 tbsp oregano
  • 1 tbsp basil
  • 1 tbsp thyme
  • 1/4 tsp ginger
  • 1/4 tsp cinnamon
  • 1/4 tsp black pepper

Optional Coating:

  • 8 tbsp flaxseed
  • 2 tbsp coconut flour
  • 1 egg (beaten)
