I’m obsessed with chopped salads at the moment. I want to share this Greek salad with those of you in need of a very easy recipe, with little faffing.
To make this as easy as possible I used a portion of a giant shop bought mixed salad, which included cherry tomatoes. I also picked up a pot of mixed green and black olives with feta cheese from the deli, so there was no need to buy these separately. I used a mixture of extra virgin olive oil and garlic olive oil (which I picked up in Lidl) to dress the salad, so there was no faffing there either.
You can make this salad and keep it in the fridge for a few days to combine with different meals. I enjoyed it with some chunks of chicken, which I cooked in coconut oil, garlic, lemon juice, parsley and black pepper.
- Shop bought mixed salad (pick one with cherry tomatoes in)
- 1/2 a red onion
- 1 Romain lettuce
- 1/3 of a cucumber
- 1 pot of mixed olives with feta cheese
- 1 tbsp extra virgin olive oil
- 1 tbsp garlic olive oil (I got mine from Lidl)
- Black pepper
Finely chop the mixed salad, romain lettuce, red onion and cucumber.
Halve the cherry tomatoes.
Add the tub of olives and feta cheese.
Add the olive oil, garlic olive oil, and grind in some black pepper. Mix well.
