Sauteed Sweetcorn with Mushrooms, Bacon and Spring Onion

You can use tinned or frozen sweetcorn for this side dish.  Last time I ate this I had it for breakfast with a mini omlette.  The juices from the bacon give this side dish a really tasty flavour.  Make as much or as little as you require, using your own preferred amounts of each ingredient, for a quick and easy accompaniment for any meal.


  • Sweetcorn
  • Mushrooms
  • Bacon
  • Spring Onions
  • 1-2 tsp Coconut oil for frying

Cut the bacon into pieces, and fry in the coconut oil on a medium heat for 4-5 minutes until browned.

Add the mushrooms and fry for a further 1-2 minutes.

Add the sweetcorn and fry for 2-3 minutes (longer if frozen), stirring continuously to coat it in the juices.  Cook until the sweetcorn is hot.

Slice the spring onions on top and serve immediately.
