Tuna Avocado


image I’m a huge fan of avocado.  This high fat beauty is full of heart healthy monounsaturated fat, with three quarters of the calories in avocado coming from fat.  Its consumption has been associated with lowering overall cholesterol levels and increasing HDL cholesterol (the good kind).  The monounsaturated fat content also boosts the body’s absorption of nutrients from the avocado, such as carotenoids and lycopene which also boost heart health and are thought to have antioxidant and cancer-fighting properties.  Avocado is a great addition to a salad as it enhances the absorption of these nutrients from other fruits and vegetables too.  Avocados provide plenty of energy and are high in fibre, which helps to fill you up too.  They have a higher protein content than most other fruits and vegetables… so what’s not to love!

This snack is one that I like to have pre-workout, to give me plenty of sustaining energy, or post workout to replenish my energy and give a recovery enhancing boost of protein.  It’s so simple to throw together….


 

Take half an avocado

Scrape the flesh out of the skin and mash in a bowl

Drain one tin of tuna and mix this into the mashed avocado

Season with a little salt and pepper

Spoon the mixture back into the avocado skin and top with spring onion and watercress to serve (you don’t have to put it back into the skin but it does look fancy)
