Slightly Spicy Aubergine Casserole


The slightly spicy aubergine casserole can be eaten for breakfast, lunch or with an evening meal.  Personally, I’m a big fan of this for breakfast, served with a turkey steak or salmon and topped with a poached egg.  Alternatively, it tastes great when cold, so it makes a nice saucy addition to a salad box.  The recipe makes about 6 servings, so it can be made up at the beginning of the week and be kept in the fridge to be combined with different meals.

  •  2 aubergines
  • 1 tsp coconut oil (for frying)
  • 1 red onion
  • 2 garlic cloves
  • 2 tins of chopped tomatoes
  • 2tbsp chopped parsley
  • Half a tsp chilli flakes
  • Half tsp cinnamon
  • Salt and pepper
