Kale and Bacon Salad with Dijon Dressing

I like to make up a couple of different salad dishes at the beginning of the week, so that I can mix and match them with different meals.  This kale and bacon salad has plenty of flavour and will keep in the fridge for the working week.  You can add as much of the salad ingredients as you like, depending on how large you want the salad to be.



  • 100g sliced kale
  • 1 carrot
  • Half a courgette
  • 3-4 slices of cooked bacon
  • Seeds (I use a mixture of pumkin, sunflower and chia seeds)


  • Half a lemon
  • 2 tbsp chopped shallot (or red onion if you don’t have a shallot)
  • 1 garlic clove
  • 1tbsp Dijon mustard
  • 1/4 cup (60ml) olive oil
  • Black pepper
